Weekly Meal Plans: Quick Weekend Dinners To Enjoy During The Holidays


The holiday season is upon us! Next week our friends across the pond will be celebrating Thanksgiving (I’ve included some recipe ideas for a great meal at the bottom of this post) and then we’ll be entering the festive period with more after-work drinks (we could do it again!), events and gatherings, all ahead of Christmas and New Year’s. So, while I know I did this a few years ago, I thought it would be a good idea to share 5 quick and easy dinner ideas that are sure to prove popular during the busy holidays!

Monday: Skinny Beans & Shrimp Curry
I love this bright, light and fresh curry, especially during periods when I’ve been eating a lot of rich food, and it only takes 25 minutes to make! Oh, and did I mention that it’s made entirely of store cupboard and freezer-friendly ingredients?

Tuesday: Air Fryer Fried Chicken Sandwich
My air fryer is a lifesaver for fast food, and I love a healthier version of the classic fried chicken sandwich for dinner, stuffed on a brioche bun with a handful of lettuce, a few pickled slices and a nice squeeze of my homemade sriracha mayo.

Wednesday: Mango Chutney Chicken Rice Bowl
Can you believe that this beautiful rice bowl, full of different flavors, colors and textures only takes 20 minutes to make? Pockets of rice and a jar of your favorite mango chutney are your main ingredients here to make a delicious bowl of rice packed as leftovers the next day like for a midweek meal.

Thursday: Slow Cooker Sausage & Peanut Butter Casserole
I know I share these slow cooker casseroles a lot, but that’s because I make them a lot, especially when I know things are very busy but I can spare half an hour early to prepare them. The crusty bread is a must with this one as there is so much delicious juice with smoky tomato sauce to clean up.

Friday: Fish Finger Tacos Wrapped with Lime Coleslaw
I always have a pack of fish fingers in the freezer (and not just to make the Nigella Fish Finger Bhorta) because with some homemade garnish they make an amazing last minute meal. These easy wraps only take 15 minutes to put together: you can slice avocado and radishes, mix taco seasoning sprinkles and mix homemade lime coleslaw while your fingers cook!
